Fast Fridays: Sweet Potato “Fries” and Mayo

Roasted carrot and sweet potato “fries” are easy to make. Just toss your long strips of carrot and sweet potato with a little drizzle of olive oil, a little paprika, and chili powder. Roast in the oven at 375 degrees for 40 minutes or so. Toss the veggies about halfway through roasting to get even browning. For serving fries, I love ketchup, but more and more, I’m a fan of the European practice of pairing fries with mayo.

Last week, I wrote about mayo–one of those things that sounds more intimidating than it is–and this week, I just want to highlight my paprika, chili mayo, a perfect companion to the sweet potato fries.
