From the Photo Archives: Ratatouille
I love cooking, and I love photography—but sometimes I don’t have time to share my photos on the blog. I’m delving back into my photo back-log to bring you posts about things that happened long enough ago that I don’t remember the exact details. These are my approximate recollections.
Back when I was watching Avec Eric, Eric Ripert’s lovely PBS show, I heard him mention his Baked Eggs with Ratatouille recipe. A the time, I had just started experimenting with eating more healthfully and I was excited about the prospect of a hearty, vegetable-based dish that could serve as a good brunch dish. So I started cooking…
It came out pretty well, if I do say so myself. Lots of lovely peppers and zucchini. (And since this was before my whole at-home vegan experiment) I used farmers market eggs and a little fontina cheese on top.
Definitely a recommended recipe.
