From the Recipe Archives: Mashed Sweet Potatoes with Streusel
I know we’re getting into spring, so there are tons of fresh veggies to be had, but I spotted this photo on my computer from the winter, and I thought I’d share some thoughts about it.
I LOVE mashed sweet potatoes as a side dish, and when you mash them with coconut milk, as we do at my house, it gives them an unexpected flavor that’s wonderful and rich. No sugar needed, just steamed sweet potatoes (about 6 large ones), mashed with 1/2 to 3/4 of a can of coconut milk. Extra sweetness and texture comes from the topping. We make a walnut streusel (walnuts, flour, brown sugar, butter, cinnamon), layer it on the dish, bake it at 350 degrees until the streusel browns, and then serve.
A quick and easy dish, it can be prepared ahead of time, if you’re having company over. Just save the browning until 20 minutes before dinner time.
