Garden Bounty: Why Kale is the One Edible You Should Consider
If you’re looking for an edible for your garden that’s easy to grow and gives you great bounty, consider any of the many varieties of kale. Kale grows in partial shade or full sun, it is not too particular about soil, and it has a fall/winter/spring growing season. Its leaves are good for everything from hearty salads to sautés, to kale chips (shown at the left).
For the kale chips shown, I picked a bunch of young kale leaves from one of my plants; washed them; tossed them with olive oil, salt, and pepper; and baked in a 350 degree oven for about 10 minutes. Voilà, easy snack or appetizer.
