Pretty (Easy) Entertaining: Leek Quiche and More
Recently, my friend Michelle asked me to help out with our friend Virginia’s baby shower by cooking some items for the party. Of course, as someone who enjoys both cooking and entertaining, I was happy to oblige.
Now you know that I love a good quiche or tart for a party, since pie-like foods are easy to transport and do well at just about any temperature. So I whipped up a leek quiche with this recipe and used a tart pan with a removable bottom for maximum prettiness.
I also revisited that great tomato quiche that I had previously made, this time with fresh tomatoes. Again, just love this recipe.
Quick tip: Butter-based pies want to shrink as you par-bake, so be sure to leave them extra high around the pan to account for shrinkage. If you don’t, it’s okay–they also do okay with a little stretching after their initial par-bake.
