Zucchini Spaghettini with Lemon-Parsley Pesto

The other night, I ate dinner at Beauty & Essex (previously mentioned in this post). One of my favorite dishes was their spaghettini with julienned zucchini, a lemon-parsley pesto, parmesan, and some red pepper.

It was a great combination of lemony, spicy, and creamy flavors, and I think it would be really easy to recreate at home.

If you’ve never made pesto at home, it’s really simple. There are many recipes out there (just do a quick web search), and I love the idea of using parsley instead of basil (and to keep it within a budget, use walnuts instead of pricy pine nuts).
